Chef
Chef Sylvio Alonso was born in the 1980s in La Fère, a village in northern France. Sylvio was an inquisitive child who enjoyed watching his mother work in the kitchen. Not surprisingly, when he turned 19, he decided to make gastronomy his passion and his career.
He studied for three years to earn his BTS (advanced technician certificate) at the Lycée hôtelier de Soissons in France. After that, wanting to broaden his knowledge even more, he worked for several prestigious establishments such as Les Sources de Caudalie, in Bordeaux; Les Fermes de Marie, in Megève; and the Le Savoie hotel in Val d’Isère. Next, he cut his teeth as head chef in the kitchen of La Coquillade, a hotel in the Relais & Châteaux network, in Provence. It was there that he met his wife-to-be, who hailed from Quebec.
Leaving France, Sylvio set sail for new horizons in Quebec at the hotel Quintessence, a five-star establishment in Mont-Tremblant. He stayed put for three years: first as sous-chef, then as head chef.
And then a fresh challenge appeared in 2019: with the support of renowned chef Éric Gonzalez, he threw himself heart and soul into opening a hotel and being its chef. The new establishment, crafted from a vision of refinement, elegance and fine cuisine rivalled only by the beauty of the surroundings, is the StoneHaven Le Manoir – a new address to be discovered in the Laurentians.
